SWORDFISH
CAJUN-Grilled swordfish
FOR THE SWORDFISH:
I prefer using swordfish that is fresh and not previously frozen, but sometimes I use that style and it is still delicious. Swordfish provides an excellent source of selenium, a micronutrient that offers important cancer-fighting and heart health benefits. It is protein-rich and loaded with niacin, vitamin B12, zinc and Omega-3. Best of all, it's low in fat and calories.
Cajun Seasoning: I use either McCormick's or Louisiana Brand of Cajun Seasoning. They are uniquely delicious. It's sometimes difficult to locate the Louisiana Brand however.
Lemon juice: The lemon juice helps to tenderize the fish and adds a bit of acidity to balance out the spice from the cajun seasonings.
Garlic: Garlic is a key ingredient in this marinade. It adds depth of flavor and helps to tenderize the swordfish.
